Get 'Christmas Day Done' with the help of Heart of England Fine Foods If you’ve ever hosted Christmas dinner, you’ll know there’s nothing more satisfying than gasps of appreciation from your guests as you present your Christmas bird with all the trimmings. This year, to help guarantee that wow factor at your Christmas table, Heart of England Fine Foods (HEFF) chef Danny Silcock has teamed up with free range poultry farmers Packington Free Range to create a speciality Christmas cookery demonstration, 'Christmas Day Done'.

So what’s on the menu? Hosted by Danny Silcock in the Taste Kitchen at Shropshire Food Enterprise Centre in Shrewsbury, the day is designed to help Christmas hosts plan and prepare the perfect Christmas Day dinner.   Guests will take part in a tutored demonstration and tasting of delicious recipe ideas including mulled cider, salmon roulade, roast Packington Free Range cockerel and inspired vegetable dishes, plus options for those with a sweeter tooth, including traditional Christmas pudding or a spiced fruit parfait.

Of course, when it comes to cooking for a party or event, timing can be everything, so the course will also help aspiring chefs with menu planning, preparation and timings.

Foodies will know that cockerel is a deliciously tasty alternative to turkey, with a 7kg bird still being able to feed up to 15 guests.  Based in Barton-under-Needwood in Staffordshire, Packington Free Range rear award-winning pork and poultry and are known for their strong ethics for animal welfare. Jointly run by brothers and fourth-generation farmers Rob and Alec Mercer, the family has been farming in the area for more than 70 years.  

Danny Silcock, HEFF Chef, said: “Christmas dinner is perhaps one of the most important meals in a family’s calendar.  Cooking for the family should be an enjoyable and relaxing time, but with expectations high, sometimes Christmas chefs can feel the heat!  We want to help people make the most of their Christmas dinner, with recipes, hints and tips to make it a pleasure, not a chore, and cooking with high quality local produce such as Packington cockerel is always something we would encourage people to do.”

Guests on the course will also be entered into a competition to win a medium Packington Free Range cockerel, weighing in at 4-5kg.
